Directions

1.

In large mixing bowl, using your fingers mix the turkey 1/2 tsp salt and black pepper.

2.

Divide in half, and form two 1/4 inch thick patties.

3.

In small bowl, combine paprika, cumin and red pepper flakes.

4.

Heat 1 Tbsp of coconut oil in pan over medium-high heat. Place patties in pan.

5.

Cook the patties undisturbed until bottoms are brown and crispy (~3min).

6.

Reduce heat to medium and break patties into small bite sized pieces. Add garlic.

7.

Sprinkle spice mixture over turkey. Cook until meat is no longer pink, and spices are fragrant.

8.

Meanwhile, cut cauliflower into cubes and then use food processor to pulse into rice sized pieces.

9.

In large pan, heat remaining 2 Tbsp of coconut oil. Add cauliflower, and salt.

10.

Cook until cauliflower begins to brown, stirring occasionally.

11.

Add almonds and lemon zest, cook for 2-3 more min.

12.

Serve cauliflower topped with meat and garnished with mint.

13.

Enjoy!
