2 Tbsp Olive Oil

16 oz Firm Tofu

1 ½ Tsp Salt

1 Tsp Ground Black Pepper

1 Tsp Garlic Powder

¼ Cup Chopped Walnuts

1 Medium Sweet Potato

1 Medium Granny Smith Apple

½ Tsp Red Pepper Flakes

¼ Cup Apple Cider

Directions

1.

While heating 1 Tbsp of olive oil in pan on meduium heat, cube tofu into bite sized chunks.

2.

Once well heated, cook tofu in pan, making sure that each piece is directly on pan.

3.

Sprinkle with 1 Tsp salt, 1/2 Tsp pepper and garlic powder to taste.

4.

Cook on at least four sides until tofu is golden and crispy. Then set aside.

5.

Peal and dice potato into bite sized cubes. Dice apple into bite sized cubes.

6.

Heat 1 Tbsp of olive oil over medium heat in pan again.

7.

Add walnuts and cook 2-3 minutes, until roasted.

8.

Add sweet potato, apple and red pepper flakes, stirring frequently.

9.

Add baby spinach and apple cider, covering pan until spinach is wilted. Stirring occasionally to keep anything from sticking to pan.

10.

Serve hot and enjoy!
