Directions

1.

Preheat oven to 420 degrees.

2.

Cook lentils in vegetable broth, according to package directions.

3.

Heat oil in pan and saute 1/2 diced red onion and carrots.

4.

In food processor, blend rolled oats, garlic powder, onion powder, smoked paprika, ground cumin, ground turmeric and cayenne pepper.

5.

Once onions and carrots are sauteed, stir dry mixture from food processor until evenly mixed. Then send all through food processor again.

6.

When lentils are ready, let them cool in fridge for 5 minutes, before adding to mixture and stirring until all ingredients are evenly spread throughout.

7.

Roll into golf-ball sized balls and let cool in fridge for 5 minutes.

8.

Chop 2 remaining onions, red peppers and tomatoes into large chunks.

9.

Melt butter in pan, then add corriander, onions, tomatoes and peppers and mix so all are covered in butter. Cook for 10 min.

10.

In the meantime, stir together flour, salt and clover in mixing bowl.

11.

Create a hole in center of flour mixture, and add eggs and milk. Use electric mixture to create batter.

12.

Spray baking dish with preferred oil. Then add about half of lentils balls. Cover with sauteed vegetables. Then place rest of lentil balls on top.

13.

Pour batter around edges.

14.

Bake for 20-25 minutes.
