½ Medium Red Onion-
2 Tsp Minced Garlic-
3 Tbsp Tomato Paste-
¼ Cup Flour-
1 Tbsp Italian Seasoning-
½ Tsp Red Pepper Flakes-
2 Cup Vegetable Broth-
1 14.5oz can Diced Tomatoes-
4 1/2 Cup Cheese Tortellini-
¼ Cup Coconut Milk-
½ Cup Parmesan Cheese-
8 oz Baby Spinach1.
Melt butter in pot on medium heat.2.
Dice onion, and add it and minced garlic to pot.3.
Once onions are translucent, add tomato paste, flour, italian seasoning and red pepper flakes. Stir with whisk or fork until evenly mixed.4.
Add vegetable broth and diced tomatoes, and bring to a boil.5.
Add tortellini and let boil for 3 minutes. Reduce heat to low and let simmer for 15 minutes.6.
Add baby spinach, folding it into mixture to wilt.7.
Add coconut milk and parmesan, stirring with spoon until cheese has completely melted.8.
Serve hot and enjoy!
