6 Medium Sweet Potatoes

Directions

1.

Preheat oven to 350 degrees.

Peal sweet potatoes, chop into 5-6 pieces and add to pot. Cover potatoes with water.

Bring pot to a boil. Reduce heat to medium low and cook until potatoes are soft (~15 - 20 min).

Drain water from pot, then mix in sugar, 1/2 cup of butter, eggs, vanilla and milk. Stir until smooth.

5.

Prep Baking Dish by spraying it with your preferred oil. Spoon potatoes into dish.

6.

In small bowl, mix 1/2 cup of butter, brown sugar, flour and pecans.

7.

Spread pecan mixture evenly over sweet potatoes.

8.

Bake for 30 minutes.

9.

Serve hot and enjoy!
