6 Medium Sweet Potatoes-
⅔ Cup Sugar-
1 Cup Butter-
2 Large Eggs-
1 Tsp Vanilla-
⅓ Cup Milk-
1 Cup Brown Sugar-
½ Cup Flour-
1 Cup Chopped Pecans1.
Preheat oven to 350 degrees.2.
Peal sweet potatoes, chop into 5-6 pieces and add to pot. Cover potatoes with water.3.
Bring pot to a boil. Reduce heat to medium low and cook until potatoes are soft (~15 - 20 min).4.
Drain water from pot, then mix in sugar, 1/2 cup of butter, eggs, vanilla and milk. Stir until smooth.5.
Prep Baking Dish by spraying it with your preferred oil. Spoon potatoes into dish.6.
In small bowl, mix 1/2 cup of butter, brown sugar, flour and pecans.7.
Spread pecan mixture evenly over sweet potatoes.8.
Bake for 30 minutes.9.
Serve hot and enjoy!
