2 Medium Sweet Potato-
6 Tbsp Olive Oil-
½ Cup Coconut Milk-

2 Medium Celery Stalks-

1 lb Ground Beef-
2 Tsp Minced Garlic-
1 Tsp Salt-
½ Tsp Ground Black Pepper-
1 Tsp Ground Thyme-
½ Tsp Oregano1.
Preheat oven to 375 degrees.2.
Peal potatoes, and cut into large chunks.3.
Bring pot of water to a boil, and add potatoes.4.
Cook for 10-15 minutes. It will be ready when you fork one of the potatoes and it easily slides off the fork.5.
Drain water from pot, then mash the potatoes in a large mixing bowl.6.
Add olive oilk, coconut milk, salt and pepper and mix until evenly distributed. Set aside.7.
Dice onion, celery and carrots.8.
Meanwhile, heat 2 tablesppons of olive oil in large pan over medium heat.9.
Add onion, celery and carrots to pan, sauteing until onions are translucent (~5min).10.
Add ground beef and garlic, using wooden spoon to break up and mix with veggies.11.
Cook until ground beef is brown and no pink is left (~7-10min).12.
Season with salt, pepper, thyme and oregano, turning temp to low for five min.13.
Prepare baking dish by spraying with preferred oil.14.
Spoon meat mixture into baking dish, spreading evenly.15.
Top with sweet potato mixture, spreading evenly.16.
Bake for 30 minutes.17.
Serve hot and enjoy!
