¼ Cup Chopped Walnuts-
1 Medium Sweet Potato-
1 Medium Granny Smith Apple-
½ Tsp Red Pepper Flakes-
¼ Cup Apple Cider-
8 oz Baby Spinach1.
Peal and dice potato into bite sized cubes. Dice apple into bite sized cubes.2.
Dice your chicken into bite size cubes, while heating olive oil in pan.3.
Add chicken to pan, and rotating pieces to cook all the way through.4.
Check chicken is fully cooked by slicking largest piece and verifying no pink inside.5.
Add walnuts and cook 2-3 minutes, until roasted.6.
Add sweet potato, apple and red pepper flakes, stirring frequently.7.
Add baby spinach and apple cider, covering pan until spinach is wilted. Stirring occasionally to keep anything from sticking to pan.8.
