5 Tbsp Nutritional Yeast-
1 Tsp Onion Powder-
2 Stalks Celery-
2 15oz can Chickpeas-
1 Large Cauliflower-
1 Cup Long Grain White Rice-
2 Tsp Minced Garlic-
1 16oz Block Firm Tofu1.
Preheat oven to 400 degrees.2.
In pot on medium-high heat, mix together vegetable broth, hot sauce, nutritional yeast, and onion powder, and bring to a boil.3.
Prep Baking Dish by spraying it with your preferred oil.4.
Strain the chickpeas and rinse with water, adding them to the baking dish.5.
Chop your cauliflower into bite-size florets and the chop the celery, adding both to baking dish.6.
Dice block of tofu into 1/4" x 1/4" pieces, and add to the baking dish.7.
Add garlic and rice to baking dish.8.
Once the liquid mixture has boiled, add it to baking dish and stir until all ingredients are evenly spread.9.
Cover with aluminum foil, and bake for 45 minutes.10.
Stir mixture so the rice that is on top is moved to the bottom, and remove aluminum foil. Bake for 15 more minutes.11.
Serve hot and enjoy!
