1 15oz can Coconut Milk-
½ Cup Vegetable Broth-
4 Tbsp Lemon Juice-
2 Tbsp Nutritional Yeast-

2 15oz can Cannelini Beans-
1 14oz can Artichoke Hearts-
12 oz Frozen Spinach-
2 Large Shallots-
1 Cup Long Grain White Rice1.
Preheat oven to 375 degrees.2.
In pot over medium high heat mix coconut milk, broth, lemon juice, nutritional yeast and salt.3.
Prep Baking Dish by spraying it with your preferred oil.4.
Add beans, artichoke hearts, spinach, diced shallots, garlic and rice to baking dish.5.
Once coconut milk mixture comes to a boil, add to baking dish and mix until evenly distributed.6.
Cover with aluminum foil, and bake for 60 minutes.7.
Remove aluminum foil and cook for 15 minutes.8.
Serve hot and enjoy!
