2 Cups Mexican Style Shredded Cheese

1 Cup Long Grain White Rice

Directions

1.

Preheat oven to 350 degrees.

Prepare rice according to package instructions, using vegetable broth instead of water.

3.

Heat olive oil on pan, and then add 1 cup of water.

4.

Chop your cauliflower into bite-size florets, and steam them in pan for ~10 min, stirring occasionally.

5.

Spray baking dish with preferred oil. Then use your fingers to crumble tofu into irregularly sized bits in dish.

6.

Add rice and cauliflower to dish.

7.

Add 1 1/2 cups of cheese, salt and pepper to dish and stir until well mixed.

8.

Bake for 15 minutes. Then sprinkle remaining cheese on top. Bake for 5 more minutes.

9.

Serve hot and enjoy!
