2 Large Cauliflower-
1 16oz Block Firm Tofu-
2 Cups Mexican Style Shredded Cheese-
1 Cup Long Grain White Rice-
2 Cups Vegetable Broth-
To Taste Salt & Pepper-
1 Tbsp Olive Oil1.
Preheat oven to 350 degrees.2.
Prepare rice according to package instructions, using vegetable broth instead of water.3.
Heat olive oil on pan, and then add 1 cup of water.4.
Chop your cauliflower into bite-size florets, and steam them in pan for ~10 min, stirring occasionally.5.
Spray baking dish with preferred oil. Then use your fingers to crumble tofu into irregularly sized bits in dish.6.
Add rice and cauliflower to dish.7.
Add 1 1/2 cups of cheese, salt and pepper to dish and stir until well mixed.8.
Bake for 15 minutes. Then sprinkle remaining cheese on top. Bake for 5 more minutes.9.
Serve hot and enjoy!
