2 Medium Sweet Potatoes-
4 Tbsp Olive Oil-
½ Cup Coconut Milk-
¼ Tsp Salt-
¼ Tsp Ground Black Pepper1.
Peal potatoes, and cut into large chunks.2.
Bring pot of water to a boil, and add potatoes.3.
Cook for 10-15 minutes. It will be ready when you fork one of the potatoes and it easily slides off the fork.4.
Drain water from pot, then mash the potatoes in a large mixing bowl.5.
Add olive oilk, coconut milk, salt and pepper and mix until evenly distributed.6.
Serve hot and enjoy!
