¼ Medium Yellow Onion-
2 Tsp Minced Garlic-
1 lb Ground Beef-
2 Tbsp Tomato Paste-
¼ Tsp Ground Cumin-
¼ Tsp Chili Powder-
1 Tsp Salt-
½ Tsp Ground Black Pepper-
1 Cup Cubed Butternut Squash-
1 Cup Spaghetti Squash1.
Preheat oven to 425 degrees.2.
Cut Spaghetti Squash lengthwise, and drizzle with 1 Tbsp of olive oil, 1/2 Tsp salt and 1/4 tsp pepper.3.
Bake Squash for 1 hour.4.
In the meantime, dice your onion and saute it in 1 Tbps of olive oil in large pan over medium heat until translucent.5.
Add minced garlic, and saute for 1-2 more minutes.6.
Add baby spinach, and cover pan with lid until spinach is rich green color and wilted.7.
Add ground meat, breaking it up into small chunks with wooden spoon to cook evently, folding in veggies as you go.8.
Add tomato paste, cumin, chili powder and rest of salt and pepper. Cook until meat is browned.9.
Add the butternut squash and cook until squash is slightly softened (2-3 min).10.
Once spaghetti squash is fully baked, let cool slightly before using a fork to scrape out stringy squash.11.
Serve Butternut Squash mixture atop of spaghetti squash and enjoy!
